Supper Club – Fire and Smoke – Cooking with Fire

Date: 05 Jul 2024
Time: 19:00 - 23:00
Location: Worton Kitchen Garden
Supper Club | Worton Nights

Our July Supper Club will introduce our newly built Barbecue – “the Biggest Pit East of Carolina” – and comprise four courses of food cooked with Fire and Smoke.

In the company of our resident Mad Professor, Charles Spence, we will have a guided meal exploring some of the many aspects of cooking with fire, its nutritional and gastronomic benefits and some of the history of this most ancient form of cookery.

Centred around the 30 hour smoking of one of our Pedigree Saddleback Pigs, the meal will be a delicious exploration of the ways fire and smoke can transform fruits, vegetables, breads and, of course, flesh!

The full menu for the evening is here:

Blackened Pink Grapefruit

Smoked Haddock Soup

Burnt Aubergine, Smoked Peppers and Wood-fired Flatbreads

30 Hour BBQ Saddleback Pig

Wood Roast Pineapple

Held on the first Friday of each month, our new Supper club will highlight a different ingredient or product each month. The aim is to produce exciting, new dishes with our seasonal produce or to showcase the best of our local suppliers and their produce. Each meal will be a four course set menu and seating will be “communal” on refectory style tables.
