It’s UK Sausage Week! As a trio of our Saddlebacks were scheduled to take their daytrip to Stroud this week, we decided to lean in to this Celebration of British Sausages! For the first time, we’ve made some “British Bangers” or at least some delicious Cumberland Sausages …
Since the girls’ return we’ve been feverishly butchering and processing! Really good-looking, purple meat – so different from the pale supermarket version. Lots of dishes refreshed for this weekend – Crackling and Apple Sauce, County Pate with Pickled Cucumber, Spicy Ribs, 18 Hour Roast Pork on Sunday and lots of new Sausages…. Our habitual Tuscan Fennel and French Country Sausages of course but also garlicky Toulouse sausages, spicy Chorizo and, for the first time. a pretty decent effort at an English banger! Not quite the smooth blandness of a Richmond but a herby, dense Cumberland sausage – perfect with Mashed Potato and a rich Onion Gravy!
Elsewhere on the menu, fabulous fish up from Cornwall with Plaice, Cock Crabs and chunky, white Hake… The fish, like the sausages, are available in the shop or on the menu in the restaurant – if you don’t see what you’re looking for, just ask.
