The weather is unremittingly bleak at the moment – it feels like the rain will never stop! Certainly, by mid-February, it is all starting to feel too much …
There are, though, moments of joy, moments when the sun breaks through and it feels like Spring maybe just around the corner! Nature is of course ahead of us – the birds have started singing joyously at dawn, the Mirabelle buds are bursting into bloom and our honey bees are on the wing ..
In the kitchen, this time of year marks a huge change as the first spring vegetables and fruit arrive to break the spell of the dense, savoury root vegetables and bitter brassicas. First up and the happiest harbinger of Spring is the forced Pink Rhubarb from the Yorkshire Rhubarb Triangle. Lots of beautiful, bubblegum pink stems down from one of the best growers in the country – available in the shop and as the fruit to accompany our signature Pavlova. We have also bottled lots of our delicious Rhubeena to drink as a cordial with sparkling water or as the key ingredient in our house speciality the Tyke’s Tickle cocktail.
From the greenhouse, we have lots of herbs and salad greens together with baby Pak Choi, Spring Onions and Chicory. Up from Cornwall we have Monkfish tails, Plaice and, for the first time in months, fresh Oysters.
