Wonderful pickles and Homemade Brawn

More delights from our Pedigree Saddlebacks again this week – the last succulent Ham served with Sauerkraut and Ratte Potatoes and, for the first time, homemade Brawn – Fromage de Tete as it is known on the other side of the Channel. An unctuous, jellied terrine of moist meat from the head and trotters – nothing is wasted here!

The full menu below lists several of our new season pickles. Not only do we have our signature Sauerkraut and Kimchee, we have a fantastic Borscht prepared with Worton Beetroot and Horseradish together with a hint of Organic Ginger – crisp, tangy and a perfect accompaniment for Grilled Mackerel. All these pickles, together with our Green Tomato Chutney and new season Piccalilli will be available to accompany restaurant dishes or for sale in the shop this weekend.
Up from Cornwall, we have fantastic Cock Crabs landed only this morning and on your plate from tomorrrow lunchtime – they couldn’t be fresher! Also featuring will be Mackerel, Scallops, Plaice and Monkfish.

Finally, we are delighted to have secured the services of some talented marksmen – we have just taken delivery of some very local Wood Pigeons which we will be roasting and serving on Grilled Polenta.
